1948年,由嵩华学院教育系转入中原大学,次年入中原大学文艺学院美术系学习。1950年秋季毕业,留中原大学文艺学院美术系美术工作队工作;1951年起,任中南文艺学院美术系创作课助教。至1954年,又转入中南美术专科学校(广州美术学院前身),任教创作课。期间,坚持参加美术创作活动,发表工笔人物画《老大爷您掉了东西没有》、年画《小计划》等。
1956年2月至1957年8月,因教学工作的需要,被派往中央美术学院,从新中国第一代美术史家王逊先生进修中国美术史。并陆续发表相关学术论文。1957年9月返回教学工作岗位,晋为讲师,正式任教中国美术史。
1961年,他便开始与迟轲、于风、杨大年先生一道,在教学工作之余,为本校的中国美术史公共课编写教材。1962年下半年至1963年上半年间,接受王逊先生和薄松年先生建议,前往中央美术学院,参加中国美术史教材的编撰工作。与薄松年先生合作编写的《中国美术史教学提纲》(油印本),在80年代中期以前教学资料尚且缺乏的情况下,一直作为中央美术学院和广州美术学院的通用教材;所编《鲁迅论中国美术遗产》、《中国陶瓷史参考资料》、《中国美术鉴赏资料》、《中国绘画史长编》等油印资料,也一度在国内部分院校的美术史教学当中发挥过积极的作用。
1976年至1982年间,借调文化部文艺研究所美术研究室(即今中国艺术研究院美术研究所),参加中国美术史编撰工作。与谭树同、温廷宽、杨庚新、刘兴珍、王玉池、岳凤霞诸先生一道,完成大型美术史资料《中国雕塑图谱》的编撰工程。在京期间,参加中国艺术研究院美术研究所的研究生招生工作(1978年),为研究生讲授《中国美术的起源问题》等课程;为中央美术学院讲授《商周美术》、《南北朝雕塑》、《唐代雕塑》等课程。1979年11月,当选中国美术史学会理事。1981年9月晋升副教授,开始招收中国美术史专业研究生。
1983年3月起,参加王伯敏主编的《中国美术通史》(八卷本)编撰工作,任副主编。次年,被聘为《中国大百科全书·美术卷》编委。1986年5月,开始加入王朝闻任总主编的《中国美术史》编撰工作,承担秦汉俑与宋代雕塑部分内容的撰著任务。同年11月,被授予广东省“工艺美术大师”称号;12月,晋升为正教授。
1993年,获广州美术学院“终身教授”荣衔;并出版了积其十年研究心血的学术著作《中国雕塑史》。该书于1995年先后获广东省高校人文社科研究成果一等奖、广东省第五届“鲁迅文艺奖”。
陈少丰教授为中国美术史的教学与研究工作倾尽了大半生的心力。任教广州美术学院四十余年间,从来都是将教学工作放在第一位,而将个人的著述放在第二位,直到临近生命的终点,还在抱病坚持教学工作,为我国的美术史论研究和美术教育事业培养了一批高层次人才。为了学术传统的薪火相传,他曾与薄松年先生一起,将五七年被错划为“右派”、“文革”期间含恨以殁的王逊先生的《中国美术史》(讲稿)整理出版,使这部曾经影响过一代美术史学者的著述得以留存于世;出于对知识的尊重,他曾婉言谢绝了王子云先生贻赠毕生收藏的雕塑史图像资料以及与他合撰《中国雕塑艺术史》的建议,并且毅然停下自己正在撰著中的《中国雕塑史》,逐字逐句地为这位年过九旬的老人校读陆续寄来的一份又一份笔迹有如“天书”一般的《中国雕塑艺术史》手稿,使这部著作成为国内正式出版的第一本体系相对比较完备的中国雕塑史著作。他对学术,始终抱持着老实、认真的态度,处处以一个学生的身份严格要求自己,在那些信息技术十分落后的年月里,他一直坚持以卡片笔记的方式积累研究资料,仅仅为写《中国雕塑史》这部著作,就足足做有卡片万余张。然而,他对自己的研究工作却总能持有“自知之明”,认为自己对中国美术的心得,主要限于对中国古代雕塑艺术的一点肤浅认识,而这点心得,又主要得益于那些永远令他感念至深的良师益友的帮助以及50年代和70年代两次时间较长的对中国古代美术遗存的实地考察。
